Making a delicious chicken noodle stir-fry at home is easy and requires little effort. All it takes is combining succulent chicken with fresh vegetables and a savory sauce to create an amazing meal for the entire family or any occasion with friends. Here, you will find an easy-to-follow guide that will help you make this flavorful dish.

All the Ingredients Needed

For the chicken:

  • 1/2lb / 250g chicken breast, cut into strips
  • 1 tsp garlic, minced
  • 1 tsp fresh red chili, finely diced
  • 1 tsp ginger, minced
  • salt & black pepper
  • 1-2 tbsp vegetable oil

For the sauce:

  • 2 tbsp dark soy sauce
  • 1/2 fresh lime
  • 1 tbsp oyster sauce
  • 1/2 tsp brown sugar
  • 1/4 tsp white pepper

For the vegetables & noodles:

  • 150g dried noodles
  • 75g snow peas
  • 4-6 mushrooms, sliced
  • sesame oil
  • 2 medium carrots, peeled & sliced into strips
  • 3 green onions, sliced
  • 1 red pepper, sliced into strips

For garnish:

  • Crushed toasted peanuts
  • Sesame seeds
  • Diced green onion

How to Make It

1. Cook the dried noodles with the package instructions, and make sure to add some sesame oil after you drain them. It is very important to refrain from rinsing the noodles.

2. For the chicken, use a wok or a large frying pan to heat 1 or 2 tablespoons of vegetable oil over high heat and add the chicken strips you have seasoned with salt and black pepper.

3. Fry them for a minute until they get golden on one side and flip them. As the other side cooks to a golden hue, add minced garlic, chili, and ginger. Cook until the spices get brown, and remove the chicken from the wok or pan.

4. For the sauce, use dark soy sauce, oyster sauce, and the juice from half a lime together, and combine them with brown sugar and white pepper in a small bowl.

5. Use the same wok or pan you did for the chicken to cook the vegetables. Add the carrot and red pepper and shake regularly to get an even char.

6. Add sliced mushrooms and fry for another minute or two. Make sure to shake the wok or pan often. Finally, add the snow peas and green onion and fry until they get soft.

7. Mix the cooked chicken, garlic, chili, and ginger mixture with the cooked noodles and the sauce. Make sure the sauce is evenly distributed.

8. Put the stir-fry on serving plates or a large platter and garnish it with diced green onion, crushed toasted peanuts, and sesame seeds. Serve it right away to enjoy the flavorful and spicy chicken noodle stir-fry!
